Say ‘Howdy’ to Authentic, New York Bagels 

It could take years to learn a craft, but it could take a lifetime to perfect an iconic, regional recipe. As New York is the fourth most represented state on SMU’s campus, the one thing these students miss the most is something from home – authentic New York bagels. A finance major at SMU that graduated in 2017 spent years doing just that. Here are the top five ways Justin Shugrue brought authentic New York bagels to Dallas. 

History 

Being from Westchester, New York, bagels were a part of each aspect of Shugrue’s life before attending SMU. According to Food & Wine’s, “The Best Bagels in America,” there is no surprise that New York is mentioned over 60 times. In New York City alone, there are 200 bagel shops alone with 500 total across the state. Having seen his family friend’s enter the field of finance, Shugrue originally thought he would become an investment banker. 

An Adventure to Texas 

After completing his degree in finance, Shugrue experienced a singular internship before deciding that this career path was not for him. Longing for both New York and Texas, it saddened him that there was not a singular product, such as authentic bagels, to tie the two together. While at SMU, there were zero bagel shops around. Recognizing this problem, Shugrue was on the road to be an entrepreneur. 

The Skilled Craft of a Bagel 

From working at a 3-star Michelin restaurant, the Inn at Pound Ridge by Jean-Georges, to local bagel shops for free, his mission was to learn how to build an authentic bagel. Here, he learned the difference between kettle boiled and steamed bagels. Having raised $300,000 from friends and family, Shugrue had a huge expectation to live up to. Then, an individual from Hudson House, Hunter Pawn, was a mentor towards him, giving him advice on business proposals and financial structure. 

New Beginnings 

In June 2020, Shugrue used the $300,000 from friends and family to open the first Shugs Bagels. Immediately, it appeared that the business was a success, having prioritized mobile pick up orders just before the COVID-19 pandemic. Additionally, the business changed to be open after hours due to the level of demand from college-aged customers. Shugreu originally doubted that anyone would want a bagel at 10 p.m., but the SMU community proved him wrong. 

To Infinity and Beyond 

Now, Shugrue and his team at Shugs Bagels are now expanding across Texas and into Louisiana. Specifically, a second Shugs Bagels has been opened in Dallas, with plans to open additional stores in Austin and New Orleans. When asked about his selection of locations, Shugrue emphasized that he only wants stores in locations with exciting, welcoming energy. He says, “The second it stops being fun and delicious, there is no reason to keep opening shops.”
